so I thought I'd start with a bang by providing one of my favorite recipes!

I am a newbie to things like OAMC and frugal cooking, but this recipe has already become a regular part of our monthly diet:

Quiche Crust
(taken from Frozen Assets by Deborah Taylor-Hough)

1-2 cups rice, cooked (white or brown)
1 egg, beaten
1 teaspoon soy sauce

Mix all ingredients together. Evenly press into a large pie or quiche pan. Bake in a 350 degree oven for ten minutes. Fill and cook according to filling recipe. (I made a double batch because I made enough filling to freeze the second pie for later.)

(taken from the above mentioned author but modified to show what I actually cooked - note.. this is a double batch.)

2 Pie Shells (I used the rice crust, but a pastry crust would work just as good.)
5 Cups ground Sausage (the breakfast kind - this can also be seasoned ground beef or half of each)
1 Cup Mayonnaise
1 Cup Milk
1/4 Cup diced Onion
1/4 Cup diced Mushrooms
4 Eggs
2 Tbsp Cornstarch
3 Cups Shredded Cheese

Brown sausage, mushrooms, and onions; drain well. In a medium bowl blend mayonnaise, milk, eggs and cornstarch. Fold in cheese, and meat mixture. Pour into prepared pie shell. Bake in pre-heated 350 degree oven for 35-40 minutes, or until knife inserted in the center comes out wet but clean. Slice and serve warm.

Freezing and Cooking Directions: (this is what I planned to do with the second pie)
When Cooled, place a sheet of waxed paper on top, then wrap completely with heavy duty aluminum wrap or freezer paper. When needed, thaw completely, then warm for 20 minutes at 300 degrees. Serves 6-8 (-- note, you can also slice and freeze in individual portions for a quick microwave meal.. or for singles)
